Ingredients for 4 servings:
- 1 kg red cabbage
- 3 m.-large apples, sour
- 2 m.-sized onion(s)
- 50 g lard, butter or margarine
- 1 bay leaf
- clove(s)
- Juniper berry(s)
- salt and pepper
- Sugar
- 2 tbsp vinegar
- 3 tbsp jelly (blackcurrant)
- 125 ml water

Remove the outer leaves from the red cabbage, quarter them, and remove the stalk. Wash the cabbage and finely chop or grate it, preferably in a food processor. Peel, quarter, core, and dice the apples. Peel and dice the onions. Melt the lard in a large pot and sauté the onions. Add the cabbage and apples and sauté. Add the bay leaf, cloves, juniper berries, salt, pepper, sugar, vinegar, jelly, and water. Simmer the red cabbage for about 45-60 minutes until tender. Season to taste with salt and sugar. Delicious with roulades, goose or duck, or sauerbraten.
