Red cabbage salad

Ingredients for 4 servings:

  • 1 red cabbage
  • 250 ml apple juice
  • Salt
  • Sugar
  • Vinegar
  • 2 bay leaves
  • 3 juniper berries
  • 4 allspice berries
  • 4 carnations
  • 2 apples
  • some red wine
  • oil
  • Almonds, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 4 hours

Cut the red cabbage into thin strips. Bring apple juice to a boil with salt, sugar (to taste), spices, and vinegar to taste. Sauté the red cabbage until just tender. Drain, stir in grated apples, a dash of red wine, and a little oil. Add as much of the stock as desired. Let cool and infuse, then sprinkle with chopped almonds. Add spices to taste.
