Apple risotto

Ingredients for 4 servings:

  • 2 small apples, sour,
  • 100 g bacon, streaky, smoked
  • 2 shallots
  • 1 clove(s) garlic, small
  • 150 g rice (risotto rice)
  • ½ liter veal stock
  • 100 ml white wine

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Finely chop the shallots and garlic and sauté in the butter. Cut the bacon into very fine strips (almost like raw ham) and add it, fry briefly. Peel the apples, slice them, and add them. Immediately add the rice, stirring well; the rice must be completely covered with liquid. Gradually add the stock and wine, adding salt if necessary. The risotto is ready when the rice is al dente and has formed a creamy consistency. Wine recommendation: Chardonnay, Riesling, both fruity.
