Ingredients for 1 servings:
- 200 g flour (wholemeal)
- 100 g sugar
- 1 tbsp baking soda
- 1 tbsp cinnamon, ground
- 1 tsp vanilla extract
- ½ tsp ground ginger
- 1 pinch of salt
- 250 g apples, peeled and diced
- 50 g raisins
- 50 ml soy milk (soy drink)
- 50 ml oil, neutral
- 150 g apples, peeled and diced
- 2 tbsp margarine, melted
- 2 tbsp brown sugar
- 2 tbsp raisins
Instructions

Mix flour, sugar, baking soda, cinnamon, vanilla, ginger, salt, apples, raisins, soy milk, and oil into a smooth batter. Pour into a greased springform pan. Streusel: Sprinkle the cake with the apples and raisins. Drizzle with melted margarine and sprinkle with brown sugar. Bake at 180°C for 50-55 minutes. Let cool in the pan for 15 minutes, then remove from the pan and let cool on a wire rack. Tastes best served warm with a scoop of vanilla ice cream.
