Apricot Cake with Difference.

The perfect apricot cake with difference. recipe with a picture and simple step-by-step instructions.

Batter:

  • 80 g Butter
  • 80 g Sugar
  • 1 pinch Ground vanilla pod
  • 3 Pc. Eggs
  • 40 g Ground hazelnuts
  • 30 g Amarettini, ground
  • 150 g Sifted flour
  • 1 teaspoon Baking powder
  • 3 tablespoon Milk

Covering:

  • 10 Pc. Apricots fresh, pitted

Topping:

  • 500 g Quark
  • 2 Pc. Eggs
  • 2,5 tablespoon Sugar
  • 1 Splash Lemon juice
  • 0,5 packet Custard powder

Batter:

  1. Stir butter and sugar until foamy, add eggs one by one, add hazelnuts, amarettini. Mix flour + baking powder, sieve in, fold in. Add milk.
  2. Grease the springform mold. Pour in the batter.
  3. Core the apricots and insert with the skin facing down.

Topping.

  1. Stir all ingredients until smooth and spread on the cake. Bake at 160 ° C for approx. 45 min.
