Ingredients for 2 servings:

  • 2 chicken breast fillets
  • 2 onions
  • 1 tbsp cornstarch
  • 450 ml fruit nectar (apricot nectar)
  • 150 g dried apricots, finely chopped
  • 1 bell pepper(s), green, finely diced
  • 60 g butter
  • salt and pepper
  • sour cream or crème fraîche

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Fry the chicken breast fillets in butter, remove, and keep warm. Sauté the onions in the pan until translucent. Mix the apricot nectar with the cornstarch, pour it into the onions, and bring to a boil. Season to taste with salt and pepper. Then add the apricots and meat and cook until almost cooked through. Add the green bell pepper and simmer for another 5 minutes. Finally, garnish the dish with sour cream. Serve with rice.
