Ingredients for 10 servings:
- 300 g flour
- 1 packet of baking powder
- 150 g quark (low-fat quark)
- 6 tbsp milk
- 60 g butter, melted
- 1 pinch of salt
- 1 red bell pepper(s)
- 1 bunch of spring onions
- 150 g sheep’s cheese
- 100 g Parmesan, freshly grated
- 1 pinch(s) of salt and pepper
- 1 egg(s)
Instructions
Working time approx. 35 minutes; Total time approx. 35 minutes
Combine the flour and baking powder in a mixing bowl with the quark, milk, butter, and salt. Using the dough hook on a hand mixer, knead into a smooth dough. Trim, wash, and finely chop the red bell pepper and spring onions. Crumble the feta cheese and mix it into the vegetables along with the Parmesan cheese. Season with salt and pepper. Knead the dough again, roll it out on a lightly floured surface into a rectangle measuring 26 x 65 cm, and cut into 10 equal squares measuring approximately 12 x 12 cm. Spread the filling in the center of the squares. Separate the egg. Brush the dough circles with egg white. Fold the corners slightly over the filling toward the center and press the edges firmly together. Brush with beaten egg yolk and place on a baking sheet lined with baking paper. Bake in a preheated oven at 200°C (175°C fan oven) for 20-25 minutes until golden brown. Tomato salad goes very well with it.
