Apricot dumplings

Ingredients for 4 servings:

  • 500 g apricot(s), ripe
  • 500 g quark
  • 7 tbsp flour
  • 3 egg yolks
  • Sugar (granulated sugar and sugar cubes)
  • Cinnamon
  • Salt
  • butter

Instructions

Working time approx. 50 minutes; Total time approx. 50 minutes

Mix the quark, flour, and egg yolk to a smooth batter. Pit the apricots and place a sugar cube in the center of each one. Dust your hands with plenty of flour, cover the apricots piece by piece with the quark dough, and form them into dumplings. This takes a bit of time and practice. Bring a large amount of water to a boil in a pot. Sprinkle a little salt into the water. Add the dumplings to the boiling water. Boil gently for 3-4 minutes, then let stand for 20 minutes. Melt the butter. Serve the apricot dumplings on plates and tear open with a fork. Pour the butter over them and sprinkle with cinnamon and sugar. Serve immediately.
