Ingredients for 4 servings:

  • 250 g quark (cottage cheese)
  • 30 g butter, soft
  • ½ lemon(s), grated peel
  • 1 egg(s)
  • 1 egg yolk
  • 80 g breadcrumbs
  • 1 pinch of salt
  • 100 g breadcrumbs
  • 50 g butter
  • sugar and cinnamon

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Quark dumplings – very variable

Squeeze the curd cheese thoroughly with a tea towel. Cream the butter, salt, and lemon zest with a mixer until fluffy. Now stir in the squeezed curd cheese, egg, and egg yolk with a whisk. Stir in the breadcrumbs and let the dough rest for about half an hour. Form 8 dumplings and let them rest in gently simmering, salted water for about 10 minutes. In the meantime, melt the sugar and butter in a pan and stir in the breadcrumbs, lightly toasting, stirring constantly. Season with a pinch of cinnamon. Roll the finished dumplings in the sweet breadcrumbs and serve with the breadcrumbs, or serve on a fruit plate with the fruit of your choice. These dumplings can be varied in many ways. They are very, very delicious if you fill them with a piece of nougat, Mozartkugeln, or fruit such as apricots, strawberries, or plums.
