Ingredients for 4 servings:
- 500 g rice
- 400 g minced meat, mixed
- 400 g peas
- 2 eggs
- 50 g cheese (Pecorino or Parmesan), grated
- 500 g tomato sauce
- some celery, 1 leaf
- 1 bunch of parsley
- ½ onion(s)
- breadcrumbs
- Oil for frying
- salt and pepper
- some flour
Instructions

Orange-shaped rice croquettes
Peel half an onion. Finely chop it along with the parsley and celery leaf. Brown everything together in a little hot oil. Add the minced meat and season with pepper and salt. After about 10 minutes, add the peas. Fry over medium heat until thickened. Cook the rice according to the package instructions until al dente (you can also add a little saffron while cooking; this will give the rice a beautiful yellow color). Once the rice is cooked, let it rest for about 5 minutes. After 5 minutes, mix it with the eggs, grated cheese, and a little flour, and let it rest for another 5 minutes. Now, use your hands to form the rice into a ball and place some of the minced meat and pea sauce in the center. Then shape the rice into an orange-sized ball. Roll the formed balls in breadcrumbs and deep-fry. After frying, drain well on paper towels and serve warm.
