Ingredients for 4 servings:
- ½ cucumber(s)
- 520 g tomatoes
- 200 g feta cheese
- 500 g arugula
- 10 walnuts
- 3 tbsp soy sauce

Chop half a cucumber into small pieces. Quarter or chop the tomatoes, depending on your preference. Chop or crumble the feta. Crush the walnuts with a mortar or similar. Mix everything together and season with 3 tablespoons of soy sauce. On Kos, we were also served toasted bread, which was underneath the salad. I usually make the salad in larger batches for us to take to work. This way, it’s enough for two days.
