Arugula and ham sandwich

Ingredients for 2 servings:

  • 4 slices of toast (whole grain)
  • 2 tbsp pine nuts, or similar
  • 4 radishes
  • 1 tbsp tomato paste
  • 1 tbsp jam, rosehip
  • 4 tbsp herb cream cheese
  • 25 g arugula
  • 4 slice(s) ham, cooked

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Toast the toast. Roast the pine nuts in a pan without fat until golden brown. Thinly slice the radishes. Mix the tomato paste with the rosehip spread. Spread a thin layer of the rosehip and tomato paste mix on each slice of toast. Roughly chop the pine nuts and mix with the herb cream cheese. Spread two slices of toast thickly with 2/3 of the herb cream cheese, then arrange the radish slices and arugula on top. Place the ham slices on top, spread the remaining herb cream cheese on the other two slices of toast, and fold the sandwiches together.
