Ingredients for 4 servings:

  • 200 g arugula
  • 80 g mushrooms, small, sliced
  • 180 g cheese (Tête de Moine)
  • salt and pepper
  • 2 tbsp yogurt
  • 2 tbsp sour cream
  • 2 tbsp oil
  • 1 tbsp balsamic vinegar
  • 2 tsp sugar
  • chives
  • basil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the arugula and spin dry. For the vinaigrette, combine salt, pepper, yogurt, sour cream, oil, balsamic vinegar, sugar, chives, and basil. Arrange the arugula, mushroom slices, and Tête de Moine rosettes (made with a special grater for this round cheese) in glasses. Drizzle with the vinaigrette and serve.
