Arugula salad with avocado and yogurt dressing

Ingredients for 4 servings:

  • 125 g arugula
  • 2 tomatoes
  • 200 g natural yogurt (3.5%)
  • 1 avocado(s)
  • Salt
  • pepper
  • nutmeg
  • Parmesan
  • Baguette(s)
  • 1 clove(s) garlic

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash and trim the arugula, dry, trim the stems, and arrange on a plate. Wash the tomatoes and remove the flower stems, cut them into wedges, and arrange them around the salad. Sprinkle both with Parmesan cheese. Halve the avocado, remove the pit, and peel the halves. Press the flesh with a potato ricer and add the yogurt, mixing everything until smooth. Peel and finely chop the garlic, and add it. Season to taste with salt, freshly ground pepper, and a little nutmeg. Serve the dressing on the salad plate. Serve with the baguette. Enjoy!
