Ash Roast (family Recipe) – Thuringian Style
The perfect ash roast (family recipe) – thuringian style recipe with a picture and simple step-by-step instructions.
- 6 piece Pork neck
- 18 medium sized Fresh onions
- Salt
- Black pepper from the mill
- Mustard
Onions – need a handkerchief?
- Peel all the onions and have a slicer ready.
Prepare pork neck
- Pound the pork neck between 2 kitchen sheets until soft. The little ones in the family are allowed to run here too. 🙂 If possible, please don’t smash the bones. If it does happen, it doesn’t matter. Then sprinkle the top with salt and pepper. Then spread a tablespoon of mustard on it. It can also be less (2-3 teaspoons).
Layer in the pot
- Now you take a pot that can withstand it in the stove (approx. 180 ° C) with a lid. Meat and onions are layered in this pot. The bottom layer is sliced onions. If the bottom is covered, the prepared meat is put into the pot with the mustard side down. Now on the meat in the pot again pepper and salt and again mustard. Then a layer of onions and another layer of the meat (again pounded and seasoned). The last layer in the pot is always a layer of grated onions.
Cook in the oven
- The whole thing can now cook for approx. 2 1/2 hours or longer in the stove with the lid at 180 ° C. The onions will lose their juice and the meat will be so tender that it falls off the bones on its own. We always serve it with our potato salad. This is also our meal on Christmas Eve as this is simply about tradition. The other days there is normal German goose.
