Asian cucumber salad with onions

Ingredients for 4 servings:

  • 1 cucumber(s)
  • 1 small onion(s)
  • 1 red chili pepper(s)
  • 1 tbsp rice vinegar
  • 1 tbsp rice wine
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • some salt
  • some pepper
  • little sugar

Instructions

Working time approx. 15 minutes; Rest time approx. 45 minutes; Total time approx. 1 hour

Peel the cucumber and onion, dice them, sprinkle with salt and pepper, and let stand for 15 minutes. Meanwhile, slit the chili pepper lengthwise, remove the seeds, and finely dice. Combine the rice vinegar, rice wine, soy sauce, and sugar. Whisk in the sesame oil. Mix the cucumber, chili, and sauce and let stand for another 30 minutes.
