Asian finger food salad

Ingredients for 4 servings:

  • 1 head of lettuce
  • 1 can peanuts, roasted and salted
  • 400 g chicken breast fillet(s)
  • 10 tbsp chili sauce, sweet
  • 1 can onion(s), roasted
  • 2 bunch noodles (rice noodles)

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Salad with a twist

Boil the chicken breast fillet in lightly salted water. Then cut into small cubes. Finely grind the peanuts using a mortar and pestle or a food processor. Mix the ground peanuts with the chili sauce and some of the chicken cooking water until smooth and dripping off a spoon. Wash the lettuce, tear off the individual leaves, and let them drain. Cook the rice noodles for 3 minutes and then refresh. Arrange the peanut mixture, chicken, roasted onions, lettuce, and rice noodles in separate bowls on the table. To eat, take a lettuce leaf, add a few cubes of meat, some rice noodles, and some of the roasted onions, and finally drizzle some of the peanut mixture over the lettuce. Fold or roll up the lettuce leaf and eat with your fingers.
