Asian noodles with tofu and wok vegetables

Ingredients for 4 servings:

  • 140 g pasta (Mienudeln)
  • 200 g tofu, of your choice
  • 400 g vegetables (stir-fried vegetables), frozen
  • 250 ml vegetable stock
  • 4 tbsp soy sauce
  • 5 tbsp chili sauce, sweet and spicy
  • oil
  • salt and pepper

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 20 minutes

Cook or soak the noodles in salted water according to the package instructions. Squeeze the tofu lightly (this will prevent it from sticking to the pan when frying) and cut into cubes. Brown in oil in a pan or wok. Add the stir-fried vegetables and cook for 8-10 minutes over medium heat. Deglaze with stock, add the noodles, season with chili and soy sauce, and heat for 2-3 minutes. Season with salt and pepper.
