Ingredients for 4 servings:
- 500 g meat (turkey, chicken or pork fillet)
- 2 red bell peppers
- 2 yellow bell peppers
- 1 bunch of spring onions
- 1 tbsp basil, chopped
- 400 ml coconut milk, unsweetened
- 1 tbsp red curry paste
- 2 tbsp soy sauce
- 1 tbsp sugar
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the peppers and spring onions. Cut the meat and peppers into strips, and the spring onions into wide rings. Bring the coconut milk to a boil in a wok, stir in the curry paste, and simmer for one minute. Add the meat strips and simmer for another four minutes. Stir occasionally. Add the vegetables and simmer for another three minutes. Finally, stir in the sugar, soy sauce, and basil. Serve with rice or Chinese egg noodles (stir these into the ragout).
