Asparagus and strawberry salad

Ingredients for 4 servings:

  • 1 kg asparagus, white
  • 500 g strawberries
  • 1 small head of lettuce
  • 3 tbsp balsamic vinegar
  • 4 tbsp olive oil
  • 2 tsp maple syrup
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Peel the white asparagus and boil it in salted water for 15-20 minutes. For the dressing, combine the balsamic vinegar, olive oil, and maple syrup and season with salt and pepper. Drain the asparagus and cut into bite-sized pieces. Let cool. Now hull and quarter the strawberries. Wash the lettuce. Mix everything with the dressing. This goes well with baguette or can also be eaten with pasta.
