Ingredients for 4 servings:
- 1 kg asparagus, white
- 300 g cooked ham
- 200 g Emmental cheese
- 200 g cream
- 4 eggs
- 200 g hollandaise sauce
- Butter for frying
- Salt
- Sugar
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 15 minutes
Peel the asparagus and cut diagonally into approximately 2 cm wide pieces. Grate the cheese. Heat butter or other fat in a pan. Add the asparagus to the pan and fry over high heat until al dente and starting to brown. Then add a little salt and sugar and caramelize lightly. In the meantime, cut the ham into approximately 2 cm wide strips. Transfer the asparagus from the pan to a baking dish. Melt a little more butter or other fat in the pan and briefly fry the ham. Add the ham to the baking dish and mix with the asparagus. Mix the hollandaise sauce, eggs, and cream with a little salt and pour into the baking dish. Mix everything carefully. Finally, spread the grated cheese on top. Bake in an oven preheated to 200°C (top/bottom heat) or 180°C (fan oven) for about 30 minutes on the middle rack, until the cheese slowly browns.
