Asparagus casserole à la Mareike

Ingredients for 2 servings:

  • 250 g asparagus
  • 1 zucchini
  • 1 spring onion(s)
  • 10 small cocktail tomatoes
  • 50 g diced ham
  • 1 packet of hollandaise sauce
  • salt and pepper
  • tarragon
  • nutmeg
  • 50 g cheese, grated
  • fried onions

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour

Gratin, asparagus, zucchini, baked

Clean the vegetables, peel the asparagus, trim the ends, and cut the rest into 2-3 cm pieces. Halve the zucchini and cut into slices of about 0.5 cm. Preheat the oven to 180 °C (top/bottom heat). Cook the asparagus until soft and the zucchini until al dente. If you have a Thermomix, cook the asparagus and zucchini as follows (the rest is without TM!): Pour water into the Thermomix, attach the simmering basket, add the asparagus pieces, and cook with the lid closed for 15 minutes/Varoma/speed 1. After 10 minutes, add the zucchini and cook for the remaining 15 minutes. Halve the tomatoes and slice the spring onions into rings. Then put the vegetables, ham, and hollandaise sauce in a baking dish, season with tarragon, nutmeg, salt, and pepper, mix well, and then sprinkle with the grated cheese. Bake in the oven at 180°C for 10-15 minutes. Sprinkle with fried onions and serve with crispy fried potatoes, for example.
