Asparagus Cordon Bleu

Ingredients for 2 servings:

  • 16 stalk(s) asparagus
  • 8 slices of ham, not too thinly sliced
  • 8 slices of cheese
  • 2 eggs
  • Flour for breading
  • Breadcrumbs for breading
  • Clarified butter for frying
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

Depending on the texture of the asparagus, trim off the lower ends and peel the asparagus. If you don’t want it crunchy, boil the asparagus in lightly salted water for about 10 minutes beforehand. Halve the asparagus spears crosswise and place four pieces next to each other. Secure with a toothpick. Prepare flour, a beaten egg seasoned with salt and pepper, and breadcrumbs for coating. Wrap each asparagus parcel with a slice of cheese and a slice of ham. Then coat each parcel in flour, egg, and breadcrumbs. Heat the oil and fry the asparagus parcels until golden brown. They taste great both hot and cold. Serve with homemade fries and salad.
