Asparagus Cream Soup Surprise with Bacon Grissini
The perfect asparagus cream soup surprise with bacon grissini recipe with a picture and simple step-by-step instructions.
For the soup:
- 1 kg Asparagus green
- 1 Pc. Diced vegetables
- 1 l Water
- 10 Pc. Scallops
- Salt
- Pepper
- 1 Pc. Lemon
- Olive oil
For the decoration:
- Edible flowers
- Balsamic vinegar
- Pesto
For the bacon breadsticks:
- 1 Pc. Puff pastry
- Strips of bacon
For the soup:
- Bring the water with the diced vegetables to a boil in a saucepan and cook the asparagus in it for 25 minutes. Season to taste with salt and pepper.
- Pass the soup through a sieve to filter out woody asparagus pieces and give the soup a creamy consistency.
- Place the scallops on kitchen paper, brush with olive oil and season with a little salt and pepper. Grate the lemon peel generously. Heat the pan with a little olive oil, briefly fry the scallops on both sides.
For the bacon breadsticks:
- Twist individually at both ends in opposite directions into a thread and place on a baking sheet lined with baking paper.
- Place the bacon grissini in the oven preheated to 180 degrees for 10 minutes.
