Asparagus curry

Ingredients for 2 servings:

  • 300 g carrot(s)
  • 300 g asparagus
  • 400 g potatoes, pre-cooked
  • 30 g cream cheese
  • Oil for frying
  • salt and pepper
  • curry powder

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Peel the carrots and asparagus and cut them crosswise into approximately 1 cm thick pieces. Sauté the carrots in approximately 10 ml of oil (1 tbsp. rapeseed oil, sunflower oil). After 5 minutes, add the asparagus and brown. Add the potatoes. Season generously with salt, pepper, and curry powder, and deglaze with a cup of water. Stir in the cream cheese, reduce slightly, and season to taste.
