Ingredients for 2 servings:
- 200 g rice (wild rice)
- 500 g mixed vegetables, frozen
- 6 stalk(s) asparagus, white
- 1 tomato(s)
- 1 onion(s), red
- 1 clove(s) garlic
- 1 tbsp rapeseed oil
- 1 cube of stock
- Salt
- 100 g prawn(s), pre-cooked, from the refrigerated section
- Water
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes
Asparagus vegetables with wild rice and shrimp
Cook the wild rice with half a stock cube and a pinch of salt according to the package instructions. Finely dice the onion and sauté in oil in a non-stick pan. Finely chop the garlic clove and sauté it with the tomato. Peel and dice the tomato and add it. Peel the asparagus and cut it into small pieces. Add it with a little water and the remaining half of the stock cube. Simmer for about 8 minutes, then add the frozen vegetables. Simmer until the vegetables are tender and the water has evaporated. Arrange the wild rice on two plates, make a hole in the center and add the shrimp. Arrange the asparagus vegetables around the rice.
