Asparagus in a dressing gown

Ingredients for 4 servings:

  • 1 kg asparagus, fresh, peeled
  • 1 package of hollandaise sauce (homemade is not suitable as the butter will curdle)
  • 4 slice(s) of cooked ham, alternatively 8 slices of raw ham
  • 4 slices of cheese (raclette cheese)
  • 4 eggs
  • 300 g flour, possibly more
  • Milk
  • 1 handful of fresh herbs (e.g. chives, parsley, wild garlic, oregano, basil)

Place the peeled asparagus in a pot with plenty of water, salt, and a pinch of sugar, let it simmer for about 20 minutes (do not boil), until al dente. In the meantime, make a pancake batter from the eggs, flour, and milk. Season with pepper and salt, and finally add the chopped herbs. Fold the mixture into 4 large, firm pancakes in batches. Now everything is ready. Preheat the oven to 200°C. Take a pancake, place a slice of ham in it, arrange about 250g of asparagus on top, and drizzle with some hollandaise sauce. Then fold the pancake closed. It’s best to start at the bottom and fold a piece over the ends of the asparagus, then the left side, and then the right side. Finally, add a slice of raclette cheese. Place the whole thing in the oven for about 15 minutes to bake. This meal is easy to prepare, and everyone will be satisfied.
