Ingredients for 4 servings:
- 1 ½ kg white asparagus
- 125g mozzarella
- 80 g Parmesan
- 80 g butter
- 5 tbsp olive oil
- 100 g Parma ham, thinly sliced
- 1 bunch of basil
- Salt
- Sugar
- butter
- 1 slice(s) of bread (white bread)
- tomato(s)
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Peel the asparagus and cook in water with 1 teaspoon each of salt and sugar until al dente. Add 1 slice of white bread (cooking time, depending on thickness, approx. 10 minutes). Preheat oven to 200 degrees Celsius. Remove the asparagus from the stock and refresh in cold water. Drain and place in a baking dish lightly greased with butter. Drain the mozzarella and cut into thin slices. Halve the tomatoes. Top the asparagus with the mozzarella, arrange the tomatoes on top, and sprinkle with Parmesan cheese. Distribute butter flakes on top and bake for 5-7 minutes. Meanwhile, heat 2 tablespoons of olive oil and the remaining butter until foaming (in a non-stick pan). Briefly fry the ham slices on both sides. Remove the asparagus from the oven, top with the ham, sprinkle with basil, and drizzle with the remaining olive oil. Serve with garlic baguette or white bread.
