Asparagus pancakes green and white

Ingredients for 2 servings:

  • 125 g flour
  • 1 pinch(s) of sugar
  • 100 g milk
  • 40 g mineral water
  • 1 egg(s)
  • 2 cloves garlic, marinated in chili
  • Salt
  • Pepper, black from the mill
  • 60 g asparagus, white
  • 60 g asparagus, green
  • Fat for frying

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Makes 4 pancakes

Finely dice the garlic cloves. Thoroughly mix the first 8 ingredients together. Peel the white asparagus and remove the woody ends. Then halve and thinly slice. Trim the ends of the green asparagus and thinly slice the stalks. Mix all the asparagus pieces into the batter. Heat fat in a pan until slightly hot (I used 4 out of 9) and fry the asparagus pancakes. Arrange the asparagus pancakes on a plate, garnish, and serve. Makes 4 pancakes. The calorie count is based on 2 pancakes.
