Asparagus salad with strawberries and balsamic vinaigrette

Ingredients for 2 servings:

  • 250 g asparagus
  • 10 strawberries
  • 2 handfuls of lamb’s lettuce or arugula
  • 10 macadamia nuts
  • 3 tbsp Parmesan (Grana Padano), sliced
  • 4 slices of ham (Serrano ham)
  • 3 tbsp oil (basil spice oil or lemon tyme)
  • 2 tbsp Balsamic vinegar or Crema di Balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

First, peel the asparagus, cut it into pieces, and cook until al dente. Wash the lettuce and strawberries. Then slice the strawberries. Roughly chop the macadamia nuts. Halve the ham slices. Mix the oil with the vinegar and spices. Arrange the lettuce, ham, asparagus, and strawberries on a plate and drizzle with the dressing. Finally, sprinkle the nuts and Parmesan cheese over the salad. A great summer salad that goes perfectly with the baguette.
