Asparagus scrambled eggs

Ingredients for 2 servings:

  • 500 g white asparagus
  • 6 m.-sized eggs
  • 3 tsp Italian herbs, frozen
  • 2 tbsp olive oil
  • ½ tsp sugar
  • Salt
  • Pepper, freshly ground

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Peel the asparagus and remove the woody ends. Cut into bite-sized pieces and add to a pan with olive oil. Season with sugar, salt, and freshly ground pepper and sauté over medium heat for about 15 minutes. Reduce the heat slightly to avoid over-browning. Crack the eggs and add them to the asparagus along with the frozen herbs. Stir until the eggs set, then season with salt and pepper if desired. Serve with bread or a baguette.
