Asparagus Soup (Peter Althof)

  • 10 Pc. Asparagus spears
  • 1 bunch Asparagus green
  • 100 g Flour
  • 90 g Butter
  • 20 g Sugar
  • 150 ml Milk
  • 1 liter Water
  • Salt
  • Lemon
  • Pepper White
  1. Peel the asparagus spears and bring the peels to a boil in a saucepan. Later add the asparagus tips. Melt the butter in a saucepan and add the flour. Stir with cold milk and then fill up with the asparagus stock until the required consistency is achieved. Season the asparagus soup with salt, white pepper, sugar and lemon. Peel the green asparagus and cut it diagonally into small pieces. Fry brown in a pan over medium heat. Then add to the asparagus soup and serve.
