Ingredients for 4 servings:
- 500 g asparagus, white
- 500 g asparagus, green
- 2 rolls of dough
- 2 cups of quark
- 1 bunch parsley, flat
- 250 g cooked ham, thinly sliced
- 2 eggs
- salt and pepper
- butter
Instructions
Working time approx. 45 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 10 minutes
Peel all of the white asparagus and peel the lower ends of the green asparagus. Cook each asparagus in salted water with butter until al dente. Finely chop the parsley, mix with the quark, and season with salt and pepper. Wrap the asparagus (3 pieces each) in cooked ham, depending on their size. Roll out the puff pastry, spread with the quark mixture, roll up as needed and according to the size of the asparagus and ham wraps, and cut to size. Beat the eggs and brush the puff pastry with a little butter and the beaten eggs. Line a baking tray with baking paper and arrange the finished rolls evenly on it. Bake in a preheated oven at 200°C (top/bottom heat) for about 10 minutes. Keep an eye on the puff pastry crust; it should turn golden brown. Tastes best warm, but can also be eaten cold.
