Asparagus with Crepe Cordon Bleu

The perfect asparagus with crepe cordon bleu recipe with a picture and simple step-by-step instructions.

Crepe batter

  • 100 g Flour
  • 1 tbsp Food starch
  • 1 pinch Salt
  • 2 Eggs
  • 2 tbsp Melted butter

for the filling

  • 100 g Cheese
  • 50 g Sheep cheese
  • 8 Discs Cooked ham
  • 2 bunch Chives
  • Cream
  • 30 g Parmesan
  1. Peel the asparagus and cook until al dente
  1. Mix the ingredients for the dough and let rest for about 30 minutes. Bake thin pancakes in a non-stick pan.
  1. Grate the cheese, crumble the sheep cheese, mix. Top each pancake with a slice of ham. Scatter some cheese on top. Wash and chop the parsley, sprinkle on the cheese. Roll up the pancakes and place in an ovenproof dish. Brush with the cream, sprinkle with the Parmesan and bake at 200 degrees for about 25 minutes.
