Asparagus with Vegetable Sausages in Lime and Thyme Dressing

The perfect asparagus with vegetable sausages in lime and thyme dressing recipe with a picture and simple step-by-step instructions.

  • 400 g Vegetable sausages
  • 500 g Asparagus green fresh
  • 3 tbsp Rapeseed oil
  • 1 tsp Dried thyme
  • Fresh lime
  • 2 tbsp Balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp Sugar
  • 4 tbsp Olive oil
  • 12 piece Physalis
  • Salt and pepper
  1. Remove the woody ends of the asparagus. Heat the rapeseed oil in a pan and fry the asparagus stalks all around for about 5 minutes. Remove the asparagus sticks from the pan.
  2. Prepare the vegetable mash according to the instructions on the package, cut into pieces. Fry in a pan with a little oil.
  3. Crush the thyme in a mortar, place in a pan and fry briefly. Peel off the lime zest with a zest, cut the lime in half and squeeze out the juice, add the lime zest and deglaze with 3 tablespoons of lime juice. Add the balsamic vinegar and bring to the boil briefly. Remove the pan from the heat, stir in the mustard and sugar. Season the dressing with salt and pepper and fold in the olive oil.
  4. Place still warm asparagus spears in the dressing and cover the pan. Arrange the vegetable munchies with asparagus and lime-thyme dressing on 4 plates and serve garnished with 3 physalis each.
