Asparagus with Yogurt Hollandaise

The perfect asparagus with yogurt hollandaise recipe with a picture and simple step-by-step instructions.

  • 1 kg Fresh asparagus
  • Salt
  • 1 pinch Sugar
  • Lemon juice
  • 2 Egg yolk
  • 3 tbsp White wine
  • 100 g Yogurt butter
  • 2 tbsp Natural yoghurt
  • Pepper
  1. Peel the asparagus and cut off the woody ends. Bring salted water with sugar and lemon juice to the boil and cook the asparagus in it for 12-15 minutes.
  2. Melt the butter. Beat the egg yolks with lemon juice and wine over a hot water bath until frothy. Gradually stir in the butter and yogurt. Season to taste with salt, pepper and sugar.
  3. As a side dish there was potato and schnitzel. Enjoy your meal!
