Asparagus with Yogurt Hollandaise

- 1 kg Fresh asparagus
- Salt
- 1 pinch Sugar
- Lemon juice
- 2 Egg yolk
- 3 tbsp White wine
- 100 g Yogurt butter
- 2 tbsp Natural yoghurt
- Pepper
- Peel the asparagus and cut off the woody ends. Bring salted water with sugar and lemon juice to the boil and cook the asparagus in it for 12-15 minutes.
- Melt the butter. Beat the egg yolks with lemon juice and wine over a hot water bath until frothy. Gradually stir in the butter and yogurt. Season to taste with salt, pepper and sugar.
- As a side dish there was potato and schnitzel. Enjoy your meal!
