Athena's Fruit Curry

Ingredients for 4 servings:

  • 2 apples
  • 2 bananas
  • 150 g grapes
  • 1 pineapple (fresh or canned)
  • 2 peaches
  • 1 large onion(s)
  • Salt
  • pepper
  • curry paste
  • Soy sauce
  • 250 ml whipped cream / soy cream / coconut milk
  • 250 g pasta (original MIE pasta, penne or spirals)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Cut all the fruit, except for the grapes, into pieces. Chop the onion and fry (preferably in a wok). Add the fruit (except the bananas) and fry. Pour in the fruit juice (reserving the juice when chopping). Then add the coconut milk, bring to a boil, and add the banana slices. Meanwhile, cook the noodles until al dente, add them to the fruit curry, and let them simmer for a few more minutes with the lid on.
