Avocado in a carrot nest

Ingredients for 2 servings:

  • 1 large avocado(s)
  • 2 large carrots
  • 1 small onion(s)
  • 1 tbsp honey
  • 4 tbsp balsamic vinegar
  • Vinegar
  • 4 tbsp olive oil
  • lemon juice
  • pepper
  • Salt
  • Herbs of your choice (basil)

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash the carrots and peel them with a vegetable peeler. Then spiralize them into carrot spaghetti. Arrange the carrot spaghetti in a bowl, forming a nest. Peel the avocado, remove the pit, and dice it. Add the avocado cubes to the carrot nest and drizzle with lemon juice. Peel the onion, slice them into strips, and scatter them over the nest. Finely chop herbs, such as fresh basil, and scatter them over the nest. Mix together a dressing from honey, balsamic vinegar, vinegar, and olive oil. Season the nest with salt and pepper, and finally drizzle the dressing over the nest.
