Avocado scrambled egg tower

Ingredients for 2 servings:

  • 1 avocado(s)
  • 2 tbsp lime juice
  • 1 tsp garlic
  • ½ tsp pepper
  • ½ tsp spice mix (Magic Dust)
  • 1 tsp sea salt
  • 1 tbsp, heaped cream yogurt (10%)
  • 4 tbsp, heaped Parmesan
  • 3 eggs
  • 1 handful of pistachios
  • 1 tsp spice mix (Aglio&Olio)
  • n. B. Clarified butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Halve the avocado, remove the pit, scoop out the flesh, and mash it with a fork. First, add the lime juice and mix. Then stir in the garlic, pepper, salt, and the seasoning mix. Grate the Parmesan cheese and fold it into the mixture along with the yogurt and one egg. Finally, add the shelled pistachios. Heat the clarified butter in two separate pans and place two dessert rings in each pan. Spread the avocado mixture between the two dessert rings in one pan and fry, covered, over low heat for about 12 to 15 minutes. In the other pan, fry the two fried eggs, uncovered, also over low heat for about eight to ten minutes until crispy. Place all the dessert rings on a wooden board, for example, and carefully cut along the inside of the dessert rings with a sharp kitchen knife. Then gently peel the dessert rings off upwards. Place the fried eggs on the avocado scrambled egg towers.
