Ingredients for 3 servings:
- 1 m.-sized avocado(s)
- 2 garlic cloves
- 2 tbsp olive oil
- 1 handful of basil leaves
- 300g spaghetti
- 10 cherry tomatoes or cocktail tomatoes
- salt and pepper
- 50 g Parmesan
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Halve and peel the avocado. Blend with garlic, olive oil, and basil leaves to make a pesto. Reserve a few basil leaves for garnish. Cook the spaghetti in salted water according to the package instructions. In a pan, combine the spaghetti, avocado pesto, salt, pepper, and 10-12 tomato halves and heat over medium heat for 3-5 minutes. Garnish the avocado pasta with tomato halves and basil leaves and sprinkle with Parmesan cheese. Avocado spaghetti is not only delicious but also healthy, especially when it comes to cholesterol.
