Ingredients for 4 servings:
- 500 g chicken breast fillet(s)
- 400 g tomatoes, strained from the can
- 2 zucchinis
- 2 stalk(s) celery
- 1 vegetable onion(s)
- 1 jar tomato pepper cut into strips, approx. 370ml
- 2 peppers, pickled
- 2 garlic cloves
- 200 ml vegetable broth, fresh or instant
- 200 g rice, wild rice mix or other rice
- 2 tbsp olive oil
- 3 tbsp tomato paste
- 150 ml wine, white, dry
- Paprika powder, sweet
- Oregano, dried
- Sugar
- Salt
- Black pepper, ground
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Wash the fillets, pat dry, and cut into strips. Wash the zucchini and slice thinly. Peel the onion and slice into strips. Wash, trim, and finely slice the celery stalks. Peel the garlic and finely chop or slice it. Prepare the rice as usual or according to the package instructions. Heat the oil in a deep pan and sear the meat, vegetables, and garlic. Season generously with salt, pepper, and paprika. Stir in the tomato paste, deglaze with the wine, broth, and passata. Season with oregano and sugar to taste, and simmer for a few minutes. Arrange the rice on plates (I use long plates for this), add the minced meat, and serve hot!
