Ingredients for 1 servings:
- 1 kg bacon
- 250 g lard
- 1 medium-sized apple, peeled, pitted and finely chopped
- 1 large onion(s), finely chopped
- 2 tsp marjoram, dried
- 1 tsp, dried rosemary, dried
Instructions
Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes
Finely dice the bacon and place it in a pan. Fry it slowly on the stovetop at level 2-3. (Really slowly, otherwise the bacon will burn too quickly and not produce enough fat.) After about 20 minutes, add the apple and onion, and after another 15 minutes, add the rosemary and marjoram. When the bacon is nice and crispy, melt the lard in it. Pour the bacon fat into heatproof, sealable containers (I prefer small earthenware pots with lids, but glass jars will work too) and let it set. These times are only approximate. I do a lot by feel and eye. We like to serve it with fresh onion bread and pickled gherkins. Good luck and enjoy!
