Clean, wash, and spin dry the lamb’s lettuce and arugula. Wash and pat dry the figs. Prepare large salad plates, arrange a nest of lamb’s lettuce and top with some arugula. Make a dressing from balsamic vinegar and oil and season with salt and pepper. Pour over the salad to infuse it. Cut the feta cheese into large cubes and wrap in bacon (secure with toothpicks). Fry the parcels in neutral oil until the bacon is browned. Halve two figs on each plate and place them on the salad nest, arrange the parcels on top, and finally shave Parmesan over the salad. Serve immediately.
