Baden cuisine has numerous delicious dishes to offer:

  • Appetizers: Soups are particularly popular as appetizers in Baden cuisine. One of the best-known is the semolina soup, but wild garlic and leek soup are also popular.
    Alternatively, onion tarts, asparagus patties, or trout fillets in puff pastry are often prepared as a starter.
  • Main dishes with meat: The Baden wine roast, the sauerbraten, and the Schäufele are particularly popular in this category.
  • Main dishes with fish: Fish is also often prepared “in the Baden style”. Pike and trout in particular are very popular here.
  • Side dishes: When it comes to side dishes, potatoes are in high demand. These are prepared, for example, as a gratin, casserole, or spaetzle. Walnut spaetzle or apple and red cabbage are also popular.
  • Desserts: The plum cake from Baden is popular throughout Germany. Other classics in this category are Striebele and the Baden pastries called Scherben.

Winemaker Roast – This is how the classic Baden cuisine succeeds

You need the following ingredients for the Baden Winzerbraten: 1 kilogram of smoked pork neck, 500 milliliters of dry Riesling, 500 milliliters of water, 6 cloves, 1 onion, 2 bay leaves, 5 juniper berries, 1 teaspoon of black peppercorns, 20 grams of butter, 1 tablespoon of flour, 100 milliliters cream, 1 teaspoon of sugar.

  1. Start by peeling your onion and inserting the cloves into the onion.
  2. Also, crush the juniper berries.
  3. Now place the meat in a large pot and add the water, wine, and spices.
  4. The meat must now simmer gently in the closed pot for about two hours.
  5. After that, put butter in a pan and when the butter has melted, stir in the flour.
  6. Deglaze the mixture with the meat stock and then add the cream and sugar.
  7. Finally, slice your meat and then pour your homemade sauce over it. The Baden winemaker’s roast is ready to be served.
