Baden onion cake

Ingredients for 4 servings:

  • 500 g flour
  • 1 tsp salt
  • 10 g yeast
  • 1 pinch(s) of sugar
  • 1 tbsp water, lukewarm
  • 50 g butter
  • 200 ml milk
  • 150 g bacon, diced
  • 500 g onion(s), finely chopped
  • salt and pepper
  • 3 eggs
  • 200 ml sweet cream

Sift flour and salt into a bowl. Dissolve yeast and sugar together in the water. Melt butter and mix first with the milk, then with the dissolved yeast. Knead this mixture into the flour and let the dough rise in a warm place for 1/2 hour. Fry the bacon cubes in a pan. When enough fat has formed, remove the browned bacon and fry the onions in the fat until translucent. Season with salt and pepper and let cool. Whisk the eggs with the cream and mix with the onions and bacon cubes until smooth. Roll out the dough and line a buttered springform pan (30 cm diameter) with a fork to create a rim. Prick the base several times with a fork. Spread the onion mixture evenly on top. Bake the cake for 30-35 minutes in an oven preheated to 200 degrees Celsius.
