Ingredients for 4 servings:
- 70 ml vinegar
- 80 ml oil
- salt and pepper
- 1 onion(s), red, chopped
- 2 tbsp chives
- 500 g jacket potatoes, cooked, still hot
- 80 ml meat broth
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
First, make a vinaigrette with oil and vinegar in a large bowl. Add a little more oil and vinegar to the bowl. Whisk in a little hot beef broth. Then add the chopped red onion and chives to the bowl. Season with salt and pepper. Mix everything together well. Peel the cooked, still-hot potatoes. Mash the soft potatoes well and add them to the bowl. Mix everything together well. Baden potato salad is traditionally served warm.
