Ingredients for 1 servings:

  • 500 g flour
  • 350 ml milk
  • 1 cube of yeast (42 g)
  • 3 tbsp sugar
  • 2 tsp salt
  • 2 tsp baking soda
  • e.g. sesame
  • n. B. Poppy

Instructions

Working time approx. 5 minutes; Rest time approx. 1 hour 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 55 minutes

Basic recipe without butter or oil. Makes about 8 pieces

For the dough, put the flour in a bowl and make a well in the center. Heat the milk to lukewarm, dissolve the yeast and 1 tablespoon of sugar in it, and pour it into the flour well. Let it rise for 15 minutes. Then stir together the flour and yeast mixture and add the salt. Knead for 5 minutes. Shape the dough into a ball and let it rise in a warm place for 1 hour (it should then double in volume). Divide the dough into 8 pieces and form balls. You can also make more pieces; they will be smaller, but they make a nicer snack. Make a hole in the center with your finger and expand it slightly. Let the circles rise for another 15 minutes. Preheat the oven to 200°C. In a saucepan, bring enough water to a boil with the remaining sugar and the baking soda. Place the bagels in the boiling water for about 15 seconds until they puff up. Remove from the water with a slotted spoon and place them on a baking sheet, leaving some space between them. Sprinkle the bagels with sesame or poppy seeds. Bake in the oven on the middle rack at 180°C (fan assisted) for about 15 minutes until golden brown.
