Bailey's yogurt ice cream

Ingredients for 4 servings:

  • 2 eggs
  • 2 packets of vanilla sugar
  • 5 tsp sugar
  • 150 g natural yogurt
  • 100 ml Baileys Irish Cream
  • 130 ml cream

Instructions

Working time approx. 15 minutes; Rest period approx. 1 day; Total time approx. 1 day 15 minutes

Separate the eggs and beat the egg whites until stiff peaks form. Whisk the egg yolks with the vanilla sugar and sugar until frothy. Add the yogurt and Bailey’s and mix well. Whip the cream until stiff peaks form. Fold the beaten egg whites and cream into the Bailey’s mixture. Whisk briefly (!) with a mixer until the mixture is homogenous. Transfer the mixture to a suitable container and freeze to set.
