Ingredients for 4 servings:

  • 4 apples, Boskoop, completely cored
  • 1 banana(s), ripe, mashed
  • 125 g double cream
  • 125 g yogurt, 10% fat, stirred
  • ½ vanilla pod(s), including the pulp
  • 2 tbsp brown sugar
  • 50 g almonds, chopped and roasted
  • 1 tsp honey
  • Lemon juice, dashes
  • Butter, in flakes

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

without marzipan

Wash the apples and core them with an apple corer. Mash the banana with a fork and squeeze a squeeze of lemon over it. Then thoroughly mix the double cream with the stirred yogurt, sugar, and vanilla seeds. Lightly toast the chopped almonds in a dry, nonstick pan and stir them into the mixture with the honey. Stuff the apples. Preheat the oven to 180°C (350°F). Place the stuffed apples in a buttered baking dish, place the butter knobs on top, and roast for 35 minutes. Serve the apples warm with homemade vanilla sauce.
