Bean sprouts in omelet

Ingredients for 4 servings:

  • 150 g soy sprouts, fresh
  • 250 g cooked ham (cut into strips)
  • 8 eggs
  • 2 tomatoes
  • 4 slice(s) bread(s), dark
  • 2 tbsp whipped cream
  • salt and pepper
  • some butter
  • nutmeg
  • chives

Sort the soy sprouts, cut the ham into strips, roll the chives, quarter the tomatoes, remove the seeds, and cut into small cubes. Whisk the eggs and cream, season with pepper, salt, and nutmeg. Melt the butter in a pan and add 1/4 of the egg mixture, letting it set briefly (1 minute). Then add 1/4 of the ham strips and the soy sprouts and let it set for another 2 minutes. When the omelet starts to set in the middle, loosen it from the pan with a spatula and fold it in half. Make 3 more omelets in the same way. Place each omelet on a slice of fresh farmhouse bread and sprinkle with the diced tomatoes and chives. With the soy sprouts, make sure you only heat them very briefly—no more than 3 minutes. This way they retain their vitamins and bite!
